2 cups sliced fresh strawberries
1 (6 ounce) package strawberry flavored gelatin mix
3 cups miniature marshmallows
1 box yellow cake mix
1 2/3 cup buttermilk
4 large eggs
Preheat oven to 350F or 180°C degrees. Lightly spray 9 x13 cake pan with non-stick cooking spray. Set aside.
Spread sliced strawberries on the bottom of the cake pan.
Evenly sprinkle on the layered strawberries with the dry strawberry gelatin powder, and top with mini marshmallows.
In a separate bowl using an electric mixer, mix together the cake mix, buttermilk and eggs until combined.
Tip: if you don’t have buttermilk then you can make the cake batter as mentioned on the box and you will need ingredients accordingly as per the box.
Once prepared pour cake batter on top of the marshmallows.
Tip: Do not pour the cake mixture up to the brim, leave a little place for the cake to rise. If there is excess cake batter then make muffins or cupcakes.
Bake for 40-50 minutes or until toothpick inserted into the center comes out clean.
Cool cake in the pan for 15-20 minutes. Run a knife around the pan to loosen the sides, and turn the cake out onto a large serving plate.
