Cashew Nut Marzipan

Ingredients:_DSC0001

200gms Cashew nuts

400gms Fine Sugar

2 Egg Whites

½ cup Rose water

Food Color

2-3 drops of Almond extract

 

Method:

Soak cashew in ½ cup rose water for about 15-20 min.  Then grind to fine paste along with the rose water

Lightly whisk the egg whites.

Tip: I add a tiny pinch of salt

In a thick bottomed pan, combine cashew paste sugar whisked eggs whites; mix well

 

Place the pan on a low fire; add the drops of Almond extract and keep stirring continuously. Make sure that the mix does not stick to the bottom of the pan and does not burn.

Cook till the mixture thickens and starts leaving the sides of the pan.

 

Pour out the mixture in a plate and knead it till the mixture is cool.

Tip: in case you have over cooked your mixture and it begins to dry, then add few drops of rose water and knead it in the cashew mixture.

 

Once cool knead again with few drops of rose water. Knead till it forms a pliable smooth and soft dough. Keep aside for awhile

Divide into 4 balls if using color.   Add color as desired. Use a rubber, silicon or plastic mold to shape them.

Place the molded sweets on a tray and let them dry

Store in an air tight container and enjoy at Christmas.
