Choriço Bites – Goan Sausages

We, Goan love our pork dishes and choriço “Goan Pork Sausages” is our most beloved ingredient. So to kick start this year, I’m posting my all-time favorite party appetizer Choriço Bites. I used Choriço beads for this recipe. Choriço is similar to the Portuguese or Spain Chorizo but it has been customized accordingly to suit the Goan spicy hot palate. You can always use the Spicy Portuguese or Spanish Chorizo in this recipe.

This appetizer is great party pleaser and my house favorite. You can prepare this dish well in advance and store them unbaked in the freezer, and make your appetizer whenever you need to, just remember, it would take about 5 to 10 minutes longer than the fresh made ones. Sometimes I make a bunch of these and stash them in a freezer and have few for breakfast as well.

It’s quick and easy to make and utilizes ingredients that are readily available or may be already in your fridge. Though this recipe has less ingredients but it does pack a punch when you eat. Make this appetizer for your next party and your guests will be surprised or whenever you are craving spicy goan snacks.

Ingredients:

10 pieces of goan sausages beads or 200gm mini cooking Choriço

1 sheet of Puff Pastry cut into 10 squares

Egg Yolk

1 tbsp. of fennel seeds

Method:

Preheat the oven to 180°C.

Beat the egg yolk lightly and set it aside

Peel the outer casing of the Choriço and Place one goan sausage bead in the middle of each square

If using mini choriço, then roll them in your hands to make a ball shape and place them in the middle of the square.

Brush the inside edges with egg yolk to help seal

Fold the pastry over the choriço balls.

Using a fork seal the edges, and place on a baking tray, lined with greaseproof paper.

Tip: At this point you can transfer to a freezer-safe container, lined with greaseproof paper to cook from frozen later. Please note, cooking times will increase when cooking from frozen and you may need to lower your oven temperature slightly.

Brush with egg yolk and sprinkle with fennel seeds.

Bake for 15-20 minutes or until the pastry is puffed and golden brown.
