Goan Tamdi Bhaji / Red Spinach / Red Amaranth Leaves

This vegetable is simple, healthy and quick to prepare. Tamdi (Red) Bhaji (Vegetable) is a common dish in Goa. It is a vegetarian dish made using Red Amaranth Leaves which is also known as Red Spinach. Some like to prepare this vegetable using lentil which also tastes good, however the below recipe is without lentil and that’s how I prepare it at home.

Red spinach is a very good for weight loss and also helps in digestion as it high level of dietary fiber, it also helps in treating anemia because of good level of iron in them.

You can prepare the red amaranth leaves bhaji quickly at home. It’s nutritious, not too spicy dish which is served along with rice and curry or you can have it along with bread or chapatti or roti.

Ingredients: (Makes for 2 – 3 persons)

800gm or 1 large bundle of Red Spinach

2 medium sized Onions finely diced

4 garlic cloves finely sliced

2-3 Green Chilies slit

½  tsp. cumin seeds (optional)

½ tsp. turmeric powder

Salt to taste

½ tsp. sugar

2 Tbsp. of grated coconut

 

 Method:

Rinse the leaves thoroughly and discard the ones which are spoiled. Roughly chop the leaves and set aside.

Heat oil in a pan, add the cumin seeds, slit green chilies and sliced garlic and let it fry for few seconds.

Next add the onions and fry until soft and gets pink.

Then add sugar and salt and fry for a few seconds.

Once the onions browns abit, Add the turmeric powder and stir well.

Next add the chopped leaves and stir it till it wilts. It will take only few seconds.

Lastly, add the grated coconut, cover it and let it steam for about a minute.

Serve it Hot and Enjoy with your rice and curry or with bread or chapati !!!
